A specialty of Chiang Mai, the spicy curry called khao soi features red curry paste, wheat- and egg-noodles and beef or chicken. For the pescetarians out there, I offer shrimp version of this culinary icon, shrimp khao soi. For the traditional dish, just replace the shrimp with beef or chicken.
