Green Pea and Smoked Salmon Fettuccine

Cook: 20 minutesMakes: 6 servings

Ingredients:
1 pound fettuccine
1/3 cup extra-virgin olive oil
3 green onions, minced
2 cloves garlic, minced
1/2 cup dry white wine
1 cup frozen peas
3 ounces smoked salmon, diced
1/2 cup grated Romano cheese
1/8 to 1/4 teaspoon white pepper

1 Cook the pasta according to the manufacturer’s instructions. Meanwhile, heat the oil in a large skillet over medium heat. Add the onions and garlic; cook until soft but not brown. Pour in the wine and peas; cook until the peas have softened.

2 Add drained pasta and salmon to the skillet; toss to combine. Sprinkle with the cheese and white pepper; toss.
